Vanilla supply volatility is structural, not cyclical.

Supply concentration in Madagascar, combined with multi-year crop cycles, means that recovery from any disruption takes years. Trade regulations, anti-dumping duties, and market speculation compound the problem. A procurement strategy that relies on a single origin or a single vanilla designation is inherently exposed.

Formulation complexity adds a second layer of risk. Vanilla does not perform uniformly across applications. In high-protein beverage systems, it must mask protein-derived off-notes while maintaining sweetness and creaminess under processing conditions. In bakery, it must retain aroma and flavor integrity through high-temperature baking. In dairy and confectionery, sensory profile consistency, including bourbon, sweet, and marshmallow tonal nuances, depends on extract quality and formulation precision.

Multi-origin diversification 

We can source from multiple origins: Madagascar, Uganda, Indonesia, India, and Papua New Guinea, covering both planifolia and tahitensis species. This geographic distribution reduces single-source dependency and enables diversity across extract profiles. Origin-specific claims and certifications such as Organic, and Fair Trade, are available.

Volume commitment and price stabilization 

With adequate lead time, we support volume lock-in for periods of one to two years, including managed storage and price stability provisions. This reduces spot-market exposure and supports more accurate cost-of-goods planning across procurement cycles.

Integrated Vanilla extraction capabilities 

dsm-firmenich extracts vanilla at three extraction sites in the US, France (close to the clients), and Madagascar (close to the source). All vanilla extracts are produced with our own beans, which we carefully selected and validated the quality. Paired with various extraction processes, we  can offer a wide range of flavor profiles as we control quality at every stage from raw bean to finished extract. It is also the foundation for our traceability guarantees.

Dairy and confectionery

Our portfolio covers a full range of sensory profiles including creamy, bourbon-style, sweet, and marshmallow-type notes, suited to ice cream, flavored yogurt, confectionery coatings, and fillings.

 

Nutritional beverages and high-protein systems

Protein inclusion, particularly in dairy and plant-based beverage matrices, significantly reduces perceived vanilla flavor intensity and introduces beany, chalky, or bitter off-notes. Our vanilla solutions for this category are specifically engineered to restore flavor impact, mask off-notes, and maintain sensory stability throughout thermal processing and storage. Performance is validated in finished-product matrices, not just in water-based model systems.

 

Bakery

Flavor retention through high-temperature baking, typically 170 to 220 degrees Celsius, requires careful selection of vanilla type, carrier system, and extract concentration. Our bakery-specific vanilla solutions are formulated for thermal stability, delivering consistent aroma and flavor profile across batch variation in cakes, cookies, pastries, and functional snack bars.

Vanilla portfolio: designations and formulation considerations

Each vanilla designation carries different labeling implications, cost structures, and performance characteristics. Selecting the right one requires alignment across procurement, R&D, and regulatory teams.

  • 100% natural vanilla extract: All flavor derived from vanilla beans. Supports single-origin labeling (Madagascar, Uganda, Indonesia) and Organic or Fair-Trade certification claims. Highest supply volatility exposure. 

  • Natural Vanilla WONF (With Other Natural Flavors): Contains characterizing vanilla extract alongside other natural flavors. Permits a "vanilla" descriptor and relevant imagery on pack. Offers greater formulation flexibility and reduced cost exposure relative to 100% natural vanilla extract.

  • Natural Flavor Vanilla Type: No vanilla extract; all-natural flavor system vanilla profile flexibility. No vanilla claim or origin imagery permitted. Provides the most stable cost structure and greatest supply reliability.

  • Artificial Vanilla Flavor: Most cost-effective option. Suitable where naturality is not a labeling requirement and can deliver a large range of profiles

By maintaining active supplier relationships across multiple origins simultaneously, we reduce supply dependency on any single growing region. If weather events, regulatory changes, or political instability affect one origin, alternative sources are already qualified and available. This means fewer forced formula changes and less reformulation costs.

Lead time requirements vary by volume and designation. In current times, we recommend initiating discussions at least 6 to 12 months ahead of your planning horizon to enable volume commitment, storage arrangement, and price stability provisions for periods of one to two years.

VANILIFT® enables partial or full replacement of vanillin in flavor systems. Because it delivers equivalent or superior sensory performance at lower inclusion levels, it reduces the overall cost of the flavor system while maintaining or enhancing mouthfeel, sweetness, and vanilla character. 

Labeling requirements vary by market and regulatory framework. As a general guide in the US: 100% vanilla extract supports "vanilla extract" claims and origin statements; Vanilla WONF supports "natural vanilla flavor with other natural flavors" and can include vanilla imagery; Natural Flavor Vanilla Type requires a "natural flavor" declaration with no vanilla-specific imagery or claims; Artificial Vanilla Flavor requires an "artificial flavor" declaration.
